Would it be possible to use multiple USB to Serial adapters on OS X? Want to be able to work with multiple server consoles at the same time.

Thank you for posting your question.
The answer is yes. You can have multiple USB serial adapters on OSX. After installing the driver software, simply plug in the multiple adapters and they should show up in Network Preferences. Configure each as usual.
