If I hold the caps lock key for 5 seconds, the keyboard will (for lack of a better term) reset itself.
The backlighting will go off and back on, and no input will be accepted for about 5 seconds.
Is it supposed to do that, and if so, can it be disabled?

This is not normal and I think we would like to replace the keyboard for you under warranty. I would need to know your Amazon Order ID # or other proof of purchase and the best shipping address.
