Just asking again… is this issue fixed in BigSur 11.3?

If not, what is the solution for some of us who may have bought this partially for Ethernet support?

Early testing has shown improvements from the upgrade to macOS 11.3 (released by Apple on 4/26/2021) for Ethernet stability with our various dock models using the Realtek RTL8153 chipset.
We would recommend to upgrade to 11.3 and see if the issue has been resolved for you as well.
