I ordered a CuBox-i to run Ubuntu Linux (and ensure that I do not break my desktop) and was wondering whether any of your docking stations will allow me to share my monitors, keyboard and mouse. I’m trying to avoid having 2 separate setups while I learn some new programming skills.

Unfortunately, the state of DisplayLink USB graphics on Linux is less than ideal, and although it may somewhat work in certain cases, the performance will leave a lot to be desired.
We simply cannot recommend our docking stations and USB graphics adapters for use on Linux systems at the moment due to the poor state that these drivers are currently in.
