Want to connect two screens, keyboard, mouse and network to one Laptop, and have the Laptop closed, can this be done?

It depends on the PC settings if you could close the laptop when connecting those external devices or not, though.
Some of them could be going to sleep mode when in the clam-shell mode. But most of the cases you should be able to change the behavior by using the proprietary software or changing the BIOS settings.
We have experienced that a few laptop models went very slow when it’s closed, and there wasn’t any way to change it. Please note that, in that case, the solution need to be provided by the laptop manufacture as the system/BIOS update for the particular laptops.
