I am using the transfer cable and it seems to quit. It has been going for hours and it says it still has a day and an hour left to go! I need my computer for work tomorrow. Can I stop it during the transfer and complete at another time?

Thanks for posting your question here. Windows Easy Transfer can take a long time to complete so it’s not unheard of for it to have more than a day left. You can stop the transfer at any time and continue to use the old computer but the new computer will not be completely setup. As far as I know, there is not a way to restart the transfer from a partial attempt.
