When I go to settings on Video proc Amp tab Sharpness White Balance Backlight Gain Color Enable Anti Flicker are all grayed out. On Camera Control Tab everything is grayed out.

This is intentional, these items aren’t configurable with the camera chipset. Those options only exist so that if a device has those configuration options, you will be able to change them.
